I tried a recipe from Giada De Laurentis, lemon ricotta cookies with lemon glaze and they are much better than the picture. I picked this so I could use the lemons from my tree. If I make them again I will not use 2 tablespoons for each cookie, way too big. She said you'd get 44 but I only got 24. You can find this recipe at foodnetwork.com

Wow! They actually have ricotta in them? I love lemon. I should look for a vegan lemon cookie recipe.
Yummy - they do look huge though! I was thinking the same thing as Kim - I think if you wanted to veganize them you could sub tofu for the ricotta...
